Recipe ReDux Prawn Tom Yum Soup – by Emma Stirling APD, Editor

It’s Recipe ReDux time again and this month’s theme is treasures from the sea (seafood and little, sustainable fish as well as seaweed and kelp).  And what perfect timing as we spent last weekend at Apollo Bay helping Mr Surfer Dude run the Great Ocean Road Marathon.  Dubbed as one of the most picturesque marathons in the world, it literally stops traffic as the field take on all 45km of long gruelling hills, hugging the coast.  So what better time to take a batch of Tom Yum paste and cook up this Asian sweet-sour soup, beach side.  Enjoy our postcards.

Tom Yum paste is easy to buy in jars in my neck of the woods, close to South East Asia, but I love pounding my own ginger, lemon grass, garlic, chilli, kaffir lime leaves, tomatoes and red onion in the mortar and pestle.  I carried a little jar full on our road trip.

After a night in town, pasta at the pub and a sleep at the B&B (noice and unusual), we had the long wait for Daddy on Sunday.  So we found the local fish co-op right by the pier and bought some fresh, green prawns.  Master 7 cut loose at the skate park. And we watched the Tanzanian runners come in around 2.5hrs.  Gobsmacked. Then the elite athletes arrived and got their recovery bananas.  And we still waited for Daddy.

Finally, nearly 5hours later he arrived.  We’re sorry we can’t show his face.  It was still a bit ugly at this stage.  But there’s his medal.  And boy were we proud. While he waded in the icy water to chill down those muscles, Miss Ten (yep birthday last week) helped me prep the soup on our camp stove.  We added the paste to the pot with water, fish sauce, fresh lime juice, palm sugar and rice noodles, popped in the prawns and finished off with fresh coriander.  Salty, sweet, sour.  Classic Asian flavour balance.  Filling, yet oh so delish and refreshing.  You can print the recipe here Recipe Redux Prawn Tom Yum Soup and make sure you check out the other sea inspired recipes this month, next.  I’d also love to hear from you in the comments.  Do you have a favourite from the sea recipe? What about a big fitness goal this year? Or perhaps you could drop a “well done”, to Mr Surfer Dude.  He’d be well chuffed.
